Peach and Thyme Cookes

Four years ago, I bought a peach tree online from the Arbor Day Foundation and planted what looked like a stick into my yard.  Lucky for me, I live in a climate (zone 7) that is kind to peaches and this tree has taken off.  Here’s a recent picture with my Goldendoodle trolling the ground for fallen peaches. It’s his favorite time of year!

I’ve been blessed with more fruit than I can handle.  Here is one of several harvests. If you are friends with me, chances are I’ve been begging you to take peaches from me.  I can’t stand to see delicious fruit go to waste! “Hi, I’m Ashley.  Do you like peaches?  Here, take a bag.”  (I’m only partly joking about me doing this…)


I wanted to create a cookie that combined this fresh fruit with my Thyme because I also happen to have an abundance of this lemon smelling beauty as well.


Here’s what I came up with: Things to do with Thyme: Make Peach and Thyme cookies. They are delicious and very fun to make and will at least use some of these peaches!

Peaches and Thyme

Peel, pit and finely dice 2 cups fresh ripe peaches. Next, you’ll need 3 T of Thyme Leaves.  Being that the leaves are so small you won’t need to dice.  However, be sure you remove all of the stems from the leaves.


Cream 1/2 cup softened butter and 1 cup sugar in a bowl.  Add 1 egg and 1 tsp vanilla to the mixture.  Beat again.

In a separate bowl, combine 2 cups all-purpose flour, 1/2 tsp baking soda, 1/4 tsp nutmeg, 1/4 tsp cinnamon, 1/8 tsp ginger, 1/8 tsp ground cloves and 1/8 tsp salt.

Stir your flour mixture into your butter mixture a little at a time.  Add your peaches and thyme.  Your dough will be moist.


Drop dough by rounded teaspoonfuls onto uncreased cookie sheet.


Bake at 375 deg F for 20 minutes until cookies are lightly brown on top.  Allow to cool thoroughly before eating.

Look at me!  I combined home grown Thyme and Peaches into one single delicious cookie.  I’ve got one daughter who hates peaches (what a waste) so no surprise these weren’t a hit.  However, my other daughter gave these her official seal of approval.

Peach and Thyme Cookies


  • 1/2 cup butter
  • 1 cup sugar
  • 1 egg
  • 2 cups All Purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp nutmeg
  • 1/4 tsp cinnamon
  • 1/9 tsp ginger
  • 1/2 tsp ground cloves
  • 1/8 tsp salt
  • 1 tsp vanilla
  • 1/2 tsp salt
  • 2 cups fresh ripe peaches, diced


  1. Preheat oven to 375 deg F
  2. Peel, Pit and finely dice peaches. Set aside.
  3. Cream butter and sugar in a bowl
  4. Add egg and beat until light and fluffy. Add vanilla and beat until combined.
  5. In another bowl, mix flour, baking soda and seasonings.
  6. Still flour mixture into cream mixture, a little at a time.
  7. Stir in diced peaches
  8. Drop dough onto cookie sheet (approximately 1-2 teaspoonfuls)
  9. Bake at 325 for 20 minutes until cookies are slightly brown on top.
